Make an X on the top of each tomato. Dip them in a pot of boiling water and let them steep for about 30 seconds.
Scoop out and drain the tomatoes. Peel off its skin that will have been lifted by the heat of the water. Set aside.
Dice onions and garlic. In a frying pan, heat the oil. Cook the onions for about two minutes or until becomes translucent. Add the garlic and cook for one minute. Add the tomatoes and break them up with the spoon. Lower the heat and add your herbs in bouquet garní. Cover with a cup of hot vegetable stock (see our recipe on https://www.kikasbocadillos.com/recipe/vegetable-stock/) and cook for about two hours, adding a little hot vegetable stock whenever necessary.
Add the tomato paste and mix well. Add the sugar. Add the last cup of vegetable stock and let everything cook until most of the water evaporated. Add pepper, salt and dry oregano.
Discard the bouquet garni and use your tomato sauce with your favorite pizza or pasta recipe.
